Thirty years ago, chef and restaurateur Peter Conistis started his lifelong project of redefining Greek cuisine for Australia. He’s still going, currently at Ploos and Alpha in Sydney, but with plans to take his modern spin on Greek food around the country. We chat about longevity and energy, the back-and-forth of immigrant cuisines, and dig into the origin story of his famous (scandalous?) moussaka with scallops.

The heritage-listed warehouse provides a unique space which is further complemented by the sparkling backdrop of Sydney Harbour. Taking up residence on the promenade, the culinary master behind beloved venues including Alpha, Omega, Eleni’s and Cosmos, Chef Peter Conistis has set out to emulate the South Aegean region and transport guests through atmosphere and taste.

Once an international tourist trap, this historic precinct is now a bona fide dining destination thanks to new street dining and a flush of recent openings. Colourful outdoor seating has transformed the northern end of George Street, giving a new lease of life to Sydney's oldest pub The Fortune of War. But it's the tables at the covered dining terraces along Campbell's Stores that are in hot demand, with the strip looking directly onto the Opera House and Sydney Cove. Chef Peter Conistis' south Aegean restaurant Ploos arrived at the redeveloped dining strip 12 months ago.

Ploos by legendary chef Peter Conistis brings the flavours of the Aegean to our Circular Quay shores. South Aegean cuisine… It conjurs up an array of images, Meditterraean blue seas, white washed buildings, fresh seafood and for some (me) memories of nights spent in Cyprus and Cretean restaurants where the owner won’t let us go without another Ziviana or Raki. Aagean food is of the land, sea, heart, heritage and family.

Overlooking Sydney Harbour and the Opera House from its heritage-listed home in Campbell’s Cove, Ploos, by legendary Greek-Australian chef Peter Conistis, celebrates all things South Aegean.
